A small, affordable vegan meal planning service for people who are tired of cooking the same five dinners on rotation.

Thirty years in the making

I’ve been obsessed with health and nutrition since I was 18. I started working as a personal trainer in college and read everything I could get my hands on — books, journals, anything. I loved watching people push past what they thought their bodies could do, and seeing how the right training and nutrition could expand those limits.

Then life happened. I started a career that had nothing to do with any of it, and fitness and nutrition slid to the back burner for years.

What brought me back

My father got sick. When he did, I went back to everything I’d stopped paying attention to. I spent night after night reading again — books, studies, anything I could get through. That’s when I picked up The China Study. It wasn’t just informative; it completely changed how I thought about food.

When my father passed, I made myself a promise: I’d focus on being healthier, and share what I found along the way. I went back to personal training in 2015 — the same year I went plant-based. It hasn’t always been a straight line, but I’ve tried to be a little better every day since.

Where Plantiful Meal came from

Not long ago I was having lunch with a couple of vegan friends, and we got into what’s actually hard about eating plant-based. It wasn’t the cooking. It wasn’t finding vegan products at the store. It was the meal planning:

  • You cycle through the same five dinners until you’re sick of them.
  • When you try to find something new, you hit decision fatigue from a hundred recipe sites.
  • The “easy” alternative is a meal kit that costs an arm and a leg.

That was the moment. What if there was a simple, affordable place where you got a small, hand-picked lineup of new plant-based dinners every week, with the shopping list already built and the option to have the ingredients delivered?

That’s Plantiful Meal.

What I believe

  • Curation beats search. Ten good meals hand-picked for the week beats ten thousand you have to sort through. Decision fatigue is the real enemy of weeknight cooking.
  • Gluten-free deserves a full plan. Not a few scattered recipes mixed in — a dedicated lineup of 10 gluten-free vegan meals when you need it.
  • It should be affordable. $7.99/month, not $100-a-week meal kits. Eating well shouldn’t be a luxury purchase.
  • No gatekeeping. I’ll keep sharing what I learn about plant-based nutrition, what works in my own kitchen, and how the curation happens behind the scenes.
